Simple Guacamole

I have one recipe for Guacamole on this blog and it turned out good but it involved more chopping than I would like.  I adapted this recipe from one I found on Simply Recipes.  What I love about this recipe is that there is very little chopping and it is very fast to make.  I used my chopper to make this but you could also use a food processor.  We had these with some fish tacos I made (a new recipe which I will post soon…)

Avocados aren’t an ingredient you find in Indian cooking.  If you’ve never cooked with avocados check out this link on how to cut them:  How to Cut and Peel an Avocado

Simple Guacamole

1/4 cup roughly chopped red onion
1 green chilli (more if you would like it hotter)
1 ripe avocado
2 tbsp cilantro, roughly chopped
2 tbsp freshly squeezed lime juice
salt and freshly ground pepper to taste

Cut the avocado in half, remove the seed and roughly chop.

To a chopper or food processor, add the red onion and chop.  Add the green chilli and cilantro and chop.  Next add the avocado and run the chopper until it is pureed to your liking.  Add the lime juice, salt and pepper and mix.  All done!!
