Whole Wheat Oatmeal Banana Applesauce Bread

I had some overripe bananas that needed to be used up.  I wanted to make banana bread but just about every banana bread recipe I've made or eaten really doesn't taste like bread. It's more like cake in a bread shape.  I love banana bread but wanted a recipe that was healthy and I wouldn't feel guilty eating it.  This recipe fit the bill!  It's mildly sweetened with honey, uses whole wheat flour, oats and has 2 fruits in it!  It makes a great breakfast toasted with some butter although it is more delicate than a loaf of bread.

Whole Wheat Oatmeal Banana Applesauce Bread
Adapted from Ambitious Kitchen

2 bananas, mashed
1/3 cup applesauce
1/3 cup honey
3/4 cup milk
1 egg
1 tsp vanilla extract
1 1/2 cups whole wheat pastry flour
1 cup large flake/rolled oats
1 1/2 tsp baking powder
3/4 tsp baking soda
1/4 tsp salt
1 tsp cinnamon

Preheat oven to 350 F.  Grease a loaf pan.  I used a cooking spray.

In a medium bowl, mix together mashed bananas, applesauce, honey, milk, egg and vanilla extract.

In a large bowl, whisk together flour, oats, baking powder, baking soda, salt and cinnamon.  Add the wet ingredients and mix until just combined.  You can sprinkle some oats on top if you like.

Pour into prepared pan and bake for 55-60 minutes or until a toothpick inserted comes out clean with a few crumbs on it.

  3. I've baked a few banana breads while here in California, and my mom absolutely loves them. I love that you've used whole wheat flour and apple sauce in this. I've been trying to think of ways to healthify my current recipe, and honestly the only thing I've changed is use oil instead of butter, lol. There's a store here that sells Red Bob Mill's products for super cheap so I'll grab a bag of whole wheat pastry flour before leaving iA :)
