Coffee Cake with Pumpkin Flax Granola Streusel & Nature’s Path 30th Anniversary Giveaway

This year Nature’s Path is celebrating their 30th anniversary!  Nature’s Path is a family-owned Canadian company.  Their products are organic.  While browsing their website, the one line that kept coming up is their commitment to leaving the Earth in better condition than they found it.  I love this statement!  With so much mass production of just about everything, it feels like we are abusing our Earth.  I love to find companies that have such a strong commitment to treating our planet well.

In 1967, Nature’s Path co-founders opened Canada’s first vegetarian restaurant in Vancouver, British Columbia with only $7 in their pocket and a $1,500 loan.  Nature’s Path was later started out of the back of the restaurant in 1985.  Their first product was Fruit Juice Sweetened Corn Flakes which is still available today and is included in this giveaway!
We have been buying their Multigrain Oatbran Cereal for a long time because of it’s high fibre content.  My kids love this cereal which was surprising because it is not a sweet cereal.  Besides this cereal, we haven’t ventured off into Nature’s Path other products until now.  We got to try Pumpkin Flax Granola, Fruit Juice Sweetened Corn Flakes and Flax Plus Multigrain Flakes.  When you open a box of Nature’s Path cereal, you can see the quality.  Each flake is perfectly shaped and is a good thickness that doesn’t become soggy once the milk hits it.
We loved all the products we received.  I found myself snacking on the cereals right out of the box and my boys enjoyed them as well!  I used the Pumpkin Flax Granola in the Coffee Cake pictured above which gave it a nice crunch.  We also loved having it with some yogurt.

Coffee Cake with Pumpkin Flax Granola Streusel

Pumpkin Flax Granola Streusel

1 1/4 cups Nature’s Path Pumpkin Flax Granola Streusel
1/4 cup butter, melted
1/4 cup brown sugar

Coffee Cake
3/4 cup sugar
1/3 cup canola oil
1 egg
1/2 cup good quality orange juice
1 tsp vanilla extract
1 1/2 cups all-purpose flour
2 tsp baking powder

Preheat oven to 375°F.  Spray a loaf pan with baking spray.

In a small bowl, mix together ingredients for the streusel.  Set aside.

In a large bowl, whisk together sugar and oil.  Add the egg, orange juice and vanilla.  Whisk until combined.  Add the flour and baking powder.  Stir until just combined.

Pour half the batter into the prepared loaf pan.  Sprinkle half the streusel.  Pour the remaining batter on top.  Sprinkle the remaining streusel on top.

Bake for 40-50 minutes or until a toothpick inserted in the center comes out clean.

  3. I love Natures Path for all the reasons you mentioned and because they have the organic cereals my kids will eat, the chocolate rice krispies, the peanut butter and chocolate balls, the coconut granola. Not to mention their pop tarts and granola bars. I adore NP and support their core values.
    Oooh, and this cake….looks fab Asiya.

  5. I eat old fashioned oats for breakfast every morning, my favorite has banana, walnuts, dried cranberries, chia, flax, cooked quinoa and a heavy drizzle of honey. I also make twists on apple pie, carrot cake, peach cobbler and many more.

  7. I like to have cereal and a smoothie for breakfast on a regular day. On a special day I like waffles with fresh fruit and whipped cream, or bacon, eggs and hashbrowns (depending on whether I am craving sweet or salty!).
