Healthy Gingerbread Muffins
In my last post, I shared with you my review of Grace Kennedy's line of coconut products. I used the organic coconut oil to make these Healthy Gingerbread Muffins. I like to bake muffins for Hasan's breakfast but I wasn't sure if these were going to fly with him since there was no chocolate. I took them for an after school snack when I went to pick the boys up from school and they loved them. I'm glad that they are moving away from wanting everything to have chocolate in it.

Grace Kennedy Coconut Products {Review}
Growing up, there were a few dishes my mom would always use coconut in. Her Khorma and Koftay used coconut milk. She makes a tasty fried beef dish called Karahi ka Pasanday that uses shredded coconut. We I got the opportunity to review Grace Kennedy's full line of coconut products I eagerly said yes! I had no idea how many different coconut products they make. They sent me Coconut Flour, Coconut Vinegar, Coconut Chips, Coconut Water, Coconut Milk, Coconut Oil and Coconut Sugar.

Lightened Up Spinach Lasagna Roll Ups #GayLeaMom
With the new year, many people make resolutions to eat healthier after over indulging during the holidays. Gay Lea's Nordica Cottage Cheese is a great ingredient to use in your cooking to lighten meals up. It is one item I always have in my fridge. It is high in protein and a great source of calcium which is why I love having it as a snack.
