Ramadan Mubarak!  Sorry for being MIA but this month has been super busy and blogging has taken a back seat.  Today I'm back and blogging over at my good friend Henna's blog, My Ninja Naan.  I'm sharing this super easy One Pan Mexican Quinoa recipe.  I think it's a perfect balance to all the heavy iftars we have in our South Asian culture.  Also being one pan makes things even more easy.

Mortimer's Pies-On-The-Go #HalalOnTheGo {Giveaway}

With growing boys comes never ending appetites.  Sometimes it can be a challenge finding a variety of items they enjoy that are filling and quick to put together when they feel the sudden hunger pains.  I was happy to discover Mortimer's Pies-On-The-Go.  We've been having them for the past week and they have really been a life saver.  They were a quick lunch after a soccer class, an after school snack and lunch when I was just too tired to put something together.  The pies can be ready in one minute from a deep freeze.  They come in a microwavable box making things even more easy!  I recommend planning a bit ahead and baking them in the oven.  It takes about 30 minutes but it is well worth the wait.  The pastry gets nice and flaky and there is much more even heating.  Although there have been times where the day was so busy that I opted to microwave them to fill hungry tummies ASAP and they were gobbled up in no time!

Quick and Easy Bhindi {Okra}

This simple bhindi (okra) is how my mom used to prepare okra for us growing up.  It was always one of my favourites.  When I started to cook, I asked my mom how to make the bhindi she always made for us and I was so surprised to find out how simple it is to make!  All you do is fry it in a little bit of oil and sprinkle with salt..so simple yet so delicious!

Blueberry Bran Muffins

I recently found myself in the possession of a few boxes of Kellogg's All-Bran cereal.  After tasting the cereal, no one was a fan or willing to eat anymore.  So I started googling how to use the cereal in other ways.  I came across a recipe for Bran Muffins from King Arthur Flour.  Their recipe uses raisins.  I am not a fan of raisins in baked goods so I decided to use some blueberries.  They turned out excellent!  They were moist and light.  It won't be too difficult to use up all the bran cereal we have now!  Do you have any creative ways to use up All-Bran cereal?  Please share in the comments below.

Frosted Sugar Cookie Bars

I've been wanting to make Frosted Sugar Cookies for a while now.  I love the idea of spreading a cookie batter in a pan and baking.  Less time consuming than having to keep putting new batches of cookies in the oven.  I've never been very good at making cookies.  I make them too big or they come out flat.  I love the idea of cookie bars!  I find my boys are much more into cookies than cake and they loved these!

Strawberry Trifle

Trifle is a great dessert to make to feed a crowd and it's so easy to make.  Growing up trifle always had Jello, cake, custard and fruit in alternating layers.  To make this even easier, I used Instant Pudding instead of making a custard from scratch.  You can buy pound cake but I chose to make my own cake and used this recipe without the pistachios.  I baked it in a 9x13 pan.  I had some cake leftover after assembling the trifle.

Today is the Reveal Day for The Secret Recipe Club which also means I've discovered another great recipe!  This month I was assigned Hapatite written by Nicole.  The name of Nicole's blog is a combination of the words hapa and appetite.  Hapa is slang for a person of mixed racial heritage, including roots in Asian/Pacific Island ancestry.  Nicole lives in DC and is ethnically Chinese, Cherokee, German and American but culturally Hawai'ian.  This is reflected in the diversity of recipes on her blog.  Not only does she have recipes, but she shares reviews of restaurants and tea!

Easy Peach Jam {Small Batch}

My first experience with making jam was last year when I made the most amazing Strawberry Jam!  It was definitely worth all the work that when into it.  I was planning to make some again this year when we went Strawberry Picking but we never ended up going and no jam was made.  Now that it is winter, the variety and quality of fruit is not as great as summer.  It's times like these that canned fruit is a great alternative.  My son loves to have toast with some jam for breakfast, so I thought I would try making Peach Jam with California cling peaches.
