One Pan Tandoori Chicken Bake


This is a recipe my mom would make for us as kids.  The difference between my mom's and mine, is that I've used boneless chicken to speed up the cooking and I've added onion and a green pepper.  I've also added some cornstarch to help thicken the sauce. 

My boys loved to have this with rice and Masoor Ki Daal.  It's best to marinate overnight, but most times I don't because I'm not thinking that much in advance.

Banana Cake with Lemon Icing


Growing up, whenever we had extra and overripe bananas my mom would make this cake for us.  It was a favourite!  I loved the combination of banana and the lemon icing.  For the best results, use three very ripe bananas.  I don't know the original source for the recipe.  My mom would have these little pieces of paper that looked like tracing paper with recipes typed up on them.

Naseeba if you are reading this...I made this cake for Eid when you were away for Hajj...that is how behind I am on my posts...Lol...

Achaar Ka Kheema (Ground Beef in a Spicy Tomato Sauce)

Growing up I was a very picky eater.  I feel bad how much I bothered my mom.  I rarely ever took second helpings...but when my mom made Achaar Ka Kheema I always helped myself to some more.  I loved this dish growing up.  It is very easy to make..it smells amazing but the downside is that your home will smell like this dish for a couple of days afterwards. This dish tastes best with some hot roti or naan.  You have to make your own Achaar Masala which is very simple to do. I usually make a bunch and keep it in a jar so I have it on hand whenever I want to make this dish.  I also always keep a tin of canned tomatoes just so I can make this dish.  My version is basically the same as my mom's but I use a lot less oil.

Low Fat Butter Chicken - Updated


It's been a long time since I've posted and I have not been posting regularly for the past couple of years.  I've been contemplating what is it that I want for this blog.  There was a time when I was very active and working with a lot of brands.  But as life goes on, other things have taken precedence over blogging.  After thinking about the future of this blog, I've decided that I want it to be a place to record my mom's Hyderabadi recipes that I grew up on and the dishes my kids are growing up with.  A place where we can reference back to and to record our culinary history.

A Special Eid Freebie!

Crispy Spiralized Sweet Potato


Lately I've been trying to add more Sweet Potatoes to our diet.  I've always had a tough time with making Sweet Potato Fries as I can never get them crisp.  Recently, I tried spiralizing them and baking and they turned out great!  The kids ate them up with no complaints.  They are simply seasoned with extra-virgin olive oil and salt.

Originally I had a hand held spiralizer and it was difficult to use.  I bought the spiralizer attachment for my mixer and it has made spiralizing much easier.  After you have spiralized your sweet potato, you are left with a core.  I slice this up and mix in with my potatoes.  I also don't peel my potato.

Hazelnut Butter Chocolate Chip Cookies & Eid Eats 2018


I can't believe Ramadan will be here in one month!  Time goes by so quickly!  This also means that it's time to announce the fifth edition of Eid Eats!  I am hosting this event with my friends Henna from Chai & Churros and Sarah from Flour & Spice.  Head on over to their blogs to see what they are sharing for today's Eid Eats announcement!

To start things off, today I'm sharing some delicious Hazelnut Butter Chocolate Chip Cookies that are some of the best cookies I've ever had!  The recipe for these cookies are from Henna's blog.  She originally made them with Almond Butter.  I had Hazelnut Butter in the fridge and was thinking maybe they may have a Nutella flavour to them.  They didn't quite taste like Nutella but they were amazing!  I made half the recipe below and they were gone in no time!  My boys couldn't stop raving about them.  You could use whatever nut butter you have on hand for these and I'm sure they would turn out great!

Simple Veal Koftay {Indian Veal Meatball Curry}


Growing up one of my favourite dishes was Koftay. My mom made them in the Hyderabadi style.  They are delicious but a little time consuming to make.  I adapted this recipe from Kashmiri Foodie.  Following her recipes, I have been reminded that you don't need a lot of ingredients to make delicious food!  This recipe uses minimal spices, is simple to make and it's delicious! My boys gave me raving reviews when I made these the first time!  I have made them many times since as they are quick and easy to make.  We enjoy them with roti or naan but I'm sure they would be delicious with some Basmati rice as well.

Lately I've been paying more attention to the food I eat and trying to be more active.  One thing I've been doing is trying to eat more protein.  This Banana, Date and Almond Protein Smoothie is one of the ways I've been trying to increase my protein intake.  I will have this smoothie after my workout.  I personally don't like the taste of protein powder so in the recipe I've given a range to use.  You can start out with less and try to increase the amount as you get used to the flavour.  Currently I use about 3/4 scoop in my smoothie.

Chicken Tikka / Tandoori Chicken Biryani - Dum Style


One of my boys' favourite dishes is biryani.  I find the traditional Hyderabadi Biryani to be the simplest and easiest to make.  I found a recipe for Chicken Biryani, Dum Style in the cookbook Mangoes and Curry Leaves.  It was basically the recipe for Hyderabadi Biryani.  What make this type of biryani so easy, is that the meat is marinated overnight.  When it's time to cook, you put the raw meat at the bottom of the pot, top with parboiled rice and bake!  This recipe layers the raw meat in the rice and it all comes out perfectly.  I changed things up and made a Tikka/Tandoori version and everyone fell in love.  In fact, the last time I made it was for my eldest's birthday!  We love to have it with plain yogurt.  I hope you enjoy this recipe as much as we do!

Books Read in 2017


This past year has been a slow year when it came to blogging.  One of the reasons was I spent a lot more time reading.  So this year, instead of sharing the top recipes of 2017, I'll be sharing what I read in 2017.  If you are interested in the top recipes of 2017, let me know in the comments!

I have always loved reading but after having kids, it was hard to find the time.  The kids are a little older now, so I've been trying to squeeze time in whenever I can to read which basically means that if I am waiting for something...doctor appointments, after school activities..I've got a book with me.
