Spiced Sweet Potato Fries

Lately we’ve been really liking sweet potato fries.  Whenever we get Hero Burgers we now always get sweet potato fries.  They are a great change and much healthier than regular potatoes.  My husband had done some grocery store and picked up some sweet potatoes.  I needed to do something with them and started searching my favorite blogs for sweet potato recipes.  I was finding a lot of sweet potato pie recipes.  As I was searching Smitten Kitchen I came across this recipe.  I was hesitant because of the odd mix of spices…coriander, fennel and oregano???  But Smitten Kitchen has never failed me so I gave it a try and we loved it!

This recipe was originally for 2 pounds of sweet potatoes.  I had 2 and they were 700 grams which is about 1 1/2 pounds.


Spiced Sweet Potato Fries
Slightly Adapted from Smitten Kitchen


2 sweet potatoes
1 tsp coriander seeds
1/2 tsp fennel seeds
1/2 tsp dried oregano
1/2 tsp red chilli flakes
1 tsp salt
3 tbsp canola oil

Preheat oven to 425 F.  Slice sweet potatoes into sticks and put in a large bowl.  In a spice grinder, coarsely grind coriander, fennel, oregano and red chilli flakes.  Mix in salt.  Add spice mixture to sweet potatoes and toss well.  Add the oil to the bowl and toss so everything is well coated.  Transfer sweet potatoes to a foil lined baking sheet that is lightly sprayed with oil.  Bake for 15 minutes.  Then turn the fries over and bake for another 15 minutes.  Serve hot!
