Spicy Garlic Green Beans

This summer we had an abundance of green beans in our garden.  I’ve been trying to replicate Kan Shue Green Beans from Federicks.  Although I wasn’t successful these turned out really well.  This is a very simple recipe.  My husband told me not to change it the next time I make it.  I’ll take that to mean these turned out good.

Spicy Garlic Green Beans
Method Updated January 1, 2012

1 pound green beans (I had a little less)
2 tbsp canola oil
6 cloves garlic, minced or pressed
1 tsp red chilli flakes
salt to taste

Heat oil over medium-high heat.  Add green beans Add the garlic and red chilli flakes and saute for a couple of minutes.  You don’t want the garlic to brown a lot or else it will burn as you continue to cook.  Add the green beans and  and cook until you start to see some brown spots on the beans and they are starting to get tender.  Make a well in the middle and add the garlic and red chilli flakes.  Mix around in the middle until you can smell the garlic and has started to brown slightly.  Add 1/4 cup water and cover.  Reduce heat to medium-low and cook until beans are tender and water is gone.  You may need to add additional water if it becomes dry and the beans are not tender.  Season with salt.
