Braised Cauliflower with Garlic and Tomatoes

We love cauliflower in our home…even the kids.  This recipe is very simple to make.  Lately I had just been making Simple Cumin Roasted Cauliflower but change is always good.  This recipe uses basil but I think you can substitute any herb.  Next time I’m going to try some fresh coriander since that is what I always have in the fridge.

Braised Cauliflower with Garlic and Tomatoes
Adapted from The New Best Recipe

2 1/2 tbsp olive oil
1 head cauliflower cut into 1 inch florets
4 cloves of garlic, pressed or minced
1/2 tsp red chilli flakes
2 large Roma tomatoes, diced
2 tbsp minced basil (next time with try with fresh coriander)
salt to taste

Heat 2 tbsp of oil in a large skillet over medium-high heat.  When shimmering, add cauliflower stirring occasionally.  Cook until nicely browned, 6-7 minutes.  Make some space in the center and add garlic, red chilli flakes and remaining oil.  Mix together and mash until fragrant.  Mix with cauliflower and cook for another minute.  Add tomatoes and mix well.  Cover and cook until cauliflower is tender, about 4-5 minutes.  Stir in basil.  Season with salt and serve immediately.  (I made mine ahead and reheated later for dinner and it still tasted great!)
