Simple Vinaigrette

I had some spinach sitting in the fridge and wanted to make a salad.  I found this recipe and I had all the ingredients on hand.  It’s very simple to make and goes well with mild greens.  We had it with baby spinach.

Note: Please verify your red wine vinegar is Halal prior to using.  Some manufacturers add wine after the vinegar is made making them Haram.  Refer to this post on My Halal Kitchen for more details regarding alcohol based vinegars.

3 tbsp extra-virgin olive oil
2 tsp red wine vinegar
1/8 tsp salt
pinch of freshly ground black pepper
2 quarts (= 8  cups) mellow greens (I used spinach)

Combine all dressing ingredients in a jar.  Shake vigorously for about 20 seconds or until emulsified.
