Coconut Macaroons

I've never been a huge fan of coconut.  I started making these one day after making some custard and having egg whites leftover.  I didn't want to throw them out so I searched around and came across this recipe on  These are very easy to make, quick to put together and were very good.   This time I had made these to giveaway to some family.  Make sure you keep them in an airtight container otherwise they dry up and get hard.  I had put them in some cellophane bags and they had hardened up.  You can remedy this by popping it in the microwave for about 10 seconds.  They are great snack for kids too.  These would also be great dipped in some chocolate or with some drizzled on top.

Cottage Cheese Bread - Secret Recipe Club

This is my first month participating in the Secret Recipe Club.  For those that haven't heard of it, this is how it works: everyone is assigned a blog and you must pick one recipe from that blog to make.  Then on Reveal Day everyone posts the recipe they made.  It's a great way to discover new blogs and meet some great bloggers.  This month I was assigned the cute blog Baking and Creating with Avril.  What I love most about Avril's blog is the step by step pictures.  They are very helpful in making sure you are on the right path while making the recipe.  My first instinct was to make a dessert but we really need to cut back on the sweets.  So  I settled on making one of her bread recipes since I finally understand yeast.  Her recipe for Cottage Cheese Bread caught my eye.  Cottage cheese seemed like such an unusual ingredient for bread.  I thought it would also be a great way to get some more calcium into the boys.  Well, it turned out fantastic!  The cottage cheese makes the bread very moist.  I've actually made this bread twice already.  This bread is very easy to make and is not as time consuming as many other bread recipes I have seen.  Next time I am going to try substituting some of the all-purpose flour with whole wheat.  I will update this post once I have tried it out.

Aloo (Potato) Cutlets

When my husband and I got engaged, he invited my family over for dinner.  Back then I knew very little about cooking.  He prepared several dishes plus 2 desserts.  I was so impressed and a little worried because I could never have pulled something like that off.  After getting married he taught me a lot.  I was so used to Hyderabadi cuisine that I didn't realize there was such a wide variety of Indian/Pakistani dishes out there.

One of the dishes he made were these Aloo Cutlets.  He had gotten the recipe from his sister.  I love anything with potatoes and these were so good.  They are very easy to make.  You can adjust the green chillis and black pepper to suit how spicy you would like them to be.

Afghani Kebob with Tomato Gravy

Whenever I make kebobs it's always the traditional least traditional for us.  This recipe caught my eye because it had the kebobs in a gravy.  I had to increase the spices.  My sauce was less in quantity than the original recipe.  We really enjoyed this and was a nice change from the kebobs we usually have.

Hash Brown Egg Nests

My last post was for Herb Seasoning.  I used that seasoning in these Hash Brown Egg Nests.  My husband had bought egg whites from CostCo.  So you can imagine there were a lot of egg whites. He asked me to make something with them.  The first thing that came to my mind was Angel Food Cake but he didn't want dessert.  So after some searching I found these on SkinnyTaste.  I made them close to the original recipe but they were bland for us.  So I increased the seasonings, added some Herb Seasoning and mixed in some whole eggs.  I also omitted the cheese and mixed in some parsley and coriander.  They were much better.  The only thing I don't like about this recipe is that they take awhile to bake if you want them for breakfast.  I like things that are fast.  I don't want to be waiting around for an hour for breakfast to be made.  You can probably make the egg nests and prepare the egg filling ahead of time but I have yet to try this.  If we ever do have a bunch of egg whites this is definitely going to be on my list of things to make.

Herb Seasoning

This is a seasoning mix I have had in my pantry for awhile.  It is from Get Cracking! but I cannot find the recipe on their site.  This seasoning mix was for sprinkling on eggs but it is very versatile.  You can use it on pasta as well as on vegetables.  I used this most recently for an egg recipe that I will be posting in the next few days.  I make the bulk version and keep it in glass jar in my pantry.
