Banana Oatmeal Pecan Breakfast Bars

Seems like I’ve been posting lots of breakfast items lately.  Here is yet another one!  This is a recipe I found on Baking Bites.  I omitted the chocolate chips and used pecans to keep this more on the healthy side.  I also added a little bit of whole wheat.  These were a great breakfast item, especially if you eat breakfast on the go.  It makes quite a bit so next time I will try to halve the recipe.

Banana Oatmeal Pecan Breakfast Bars
Adapted from Baking Bites

1 cup all-purpose flour
1/2 cup whole wheat flour
1 tsp baking soda
1 tsp vanilla powder
1/4 tsp salt
3 tbsp canola oil
1 cup brown sugar
2 eggs
2 bananas, mashed
1 cup large flake oats (you could use quick but I haven’t tried this yet)
1 tbsp chia seeds (optional)
1/2 cup pecans, coarsely chopped

Preheat oven to 350 F.  Grease 9×13 baking pan.  Line with parchment paper and lightly grease.  Set aside.

In a medium bowl, whisk together flours, baking soda, vanilla powder and salt.

In a large bowl, whisk together oil, brown sugar, eggs and bananas.  Add the flour mixture and stir.  Next add the oats, chia seeds and pecans.  Stir until combined.

Spread into the prepared pan and bake for 18-21 minutes or until a toothpick inserted in the centre comes out clean.  Allow to cool in the pan.
