There are just a couple of days until Ramadan and once again this year, Sarah from Flour and Spice, Henna from My Ninja Naan, along with myself will be hosting Eid Eats 2015. In case you missed it last year, it's a link party where we all make a dish that we would serve on Eid. You can find all the details at the end of this post!
To get things started I'm sharing a recipe with you today that would be a wonderful treat after Eid Salat! I've made Nan Khatai using a recipe from My Ninja Naan. Nan Khatai is a buttery sugar cookie that is made in both India and Pakistan. It is flavoured with cardamom. I never ate these growing up but I do remember the scent. My husband on the other hand, loved to enjoy this as a child and really enjoyed this version I'm sharing with you today. I have made 12 cookies but if you would like that a bit smaller, divide the dough into 16 pieces as Henna did.
Adapted from My Ninja Naan
1/2 cup butter, room temperature
1/2 cup icing sugar
4 green cardamom pods, pods removed and grounded
1 cup all-purpose flour
1/4 tsp baking powder
pinch of salt
chopped almonds or pistachios for garnish
In the bowl of an electric mixer fitted with the paddle attachment, add the butter and beat until broken up. Add the icing sugar and ground cardamom. Beat on low until mixed.
In a small bowl, sift together the flour, baking powder and salt. Give it a mix. With the mixer on low, gradually add the flour to the butter mixture. Scrape down the bowl as necessary. Mix until you have a soft dough. Wrap in plastic wrap and refrigerate for 1 hour.
Preheat oven to 300°F. Line a baking sheet with parchment paper.
Divide dough into 12 pieces. Roll each into a ball making sure there are no cracks. Place on prepared baking sheet. Sprinkle pistachios on top and press into each cookie. Bake 20-22 minutes or until bottom of cookie is light brown. Let cool on baking sheet for 5 minutes and then transfer to a wire rack to cool completely.
