Chicken Bread

This Chicken Bread takes some work but the results are definitely worth it!  I have made the filling with boneless chicken breast and ground chicken.  I prefer the boneless chicken breast but find using ground chicken is much faster.  I've attempted mixing in some whole wheat flour into the dough but haven't been successful.  The dough came out very dry.  You can experiment with the filling as well.  This recipe makes two loaves.  It's great for school lunches as well!

Quinoa Mattar "Pulao"

Quinoa is something it's taken me some time to get used to.  I find it has a distinct taste that at first I did not like.  We've been eating quinoa for a couple of years but it's taken me awhile to find recipes that we enjoy.  Initially, I would make them into a patty and fry them.  Since then, I've learnt some methods that have made a big difference for me in the flavour.

Cranberry Orange Loaf

I absolutely love baking!  Lately, I haven't been baking very much because we have been trying to eat more healthy and reduce the amount of sugar in our diet.  This past weekend we had an event at my boys' school and I volunteered to bring an item for refreshements.  I took a Lemon Almond Loaf and this Cranberry Orange Loaf so I could get a chance to do some baking.  This Cranberry Orange Loaf was a recipe I had pinned awhile ago and was excited to try.  I love the flavour of cranberries and oranges together and this loaf did not disappoint!

Vegetable and Lentil Soup

The weather in Toronto has been up and down.  Some days feel like spring is here and the next day we are pulling out our winter coats again.  These cold days are perfect weather for a hearty bowl of lentil soup!  I've been making this soup for about a year now.  The lentils make this very filling and perfect for lunch.  The original recipe has spinach which I usually don't have on hand so I omitted it.
