Strawberry Banana Oatmeal Cups

Ramadan Mubarak!  We began fasting this past Saturday which means a month of fasting and ibadah (worship).  Today I'm sharing a recipe for Strawberry Banana Oatmeal Cups which would be great for suhoor (the pre dawn breakfast).  For Suhoor, we don't like to have something very heavy.  Usually we have cereal, eggs or oatmeal.  

I like to make suhoor ahead of time, so all I have to do is warm it up in the morning.  These oatmeal cups can be made before and kept in the fridge.  When you want to have them, all you have to do is warm them up in the microwave.  I've adapted this recipe from my Baked Maple Walnut Banana Oatmeal Cups.  This recipe is very versatile so you can experiment with different fruits and nuts.

Sheet Pan Spinach Quiche

Recently at my children's school, the parents arranged a surprise breakfast for the teachers to express our gratitude for all their hard work.  We all brought a dish to contribute to the brunch buffet.  I wanted to take something that was savory and took this Sheet Pan Spinach Quiche.  A long time ago I had shared a recipe for Spinach Quiche.  I continue to make this quiche but now use a different crust.  The crust I now use is half of the crust recipe below with the exception of mixing in some whole wheat flour.

When I first started cooking I used to use a lot of Shan Masala. For those of you who don't know what Shan Masala is, it is a spice mix and has simple directions for how to make the dish.  There are Shan packets for just about every Pakistani or Indian dish you can imagine.  I found them really helpful when I got married.  It helped me get familiar with the process of cooking and not get hung up on all the ingredients.

Whole Wheat Chocolate Chip Muffins

Just about every week I am baking muffins for my eldest son's breakfast.  He loves to have baked goods for breakfast while my youngest is an oatmeal fan.  These Whole Wheat Chocolate Chip Muffins are one of his favourites.  I make them half with white whole wheat flour to make them more filling and healthy.  In Canada, you can find white whole wheat flour at Bulk Barn.  I find it's lighter than regular whole wheat and isn't as dry.  I have used some coconut sugar in this recipe.  If you don't have any, you can substitute regular sugar.
