Chicken Kheema & Eid Eats 2017

Ramadan is almost here and that means we are prepping for the fourth edition of Eid Eats 2017!  Henna from My Ninja Naan and I are hosting this event.  For those of you that are not familiar with Eid Eats, it’s a virtual potluck where we all make something that we would serve on Eid.  Then on June 20, 2017, we all add our post to a linkup on either Henna’s or my blog.  All the details can be found at the end of this post.

To start things off, I am sharing a recipe from Henna’s blog.  We all have those recipes that are our go-to recipes.  The ones that are quick to whip up, use minimal ingredients and are satisfying.  This is one of my go-to recipes.  I’ve been making Henna’s recipe for Chicken Kheema ever since she posted it.  When I run out of adrak laysan (ginger garlic paste), it is a recipe I always think of.  Sometimes I add potatoes because I am such a potato addict.  Today I’ve left them out.  We enjoy this kheema with roti and daal.

Chicken Kheema

Adapted from My Ninja Naan

1 lb ground chicken
3 tbsp canola oil
1/2 onion, diced
1 tsp cumin seeds
1 green chilli, chopped (I only had a red chilli)
1 tomato, diced
1 tsp coriander powder
1/2 tsp red chilli powder
salt, to taste
handful coriander, chopped

In a pot, heat oil over medium-high heat.  Add onions and fry until translucent.

Add chicken, cumin seeds and green chilli.  Cook until chicken no longer looks pink.

Add tomato, coriander powder, red chilli powder and salt.  Cook for a few minutes.  Cover and reduce heat to medium-low.  Cook until tomatoes have lost their shape and most of the liquid has evaporated.  Remove lid and cook until all the water has evaporated.  Remove from heat, sprinkle coriander and enjoy!

  3. On June 20, 2017, visit one of our blogs to add your post to the link up.  The link up will be open until June 24, 2017.
  4. Be sure to visit and comment on the other blogs participating.
