Easy Veal Khorma

Easy Veal Khorma in a white bowl.

This is one of the original recipes from my blog…back when I had no clue about photography and lighting.  I had made it with chicken.  Today I’ve made the same khorma using veal.  You can easily switch up the protein for chicken as the original recipe.  For this recipe, I do not recommend using a pressure cooker.  I find making recipes that have a lot of yogurt tend to burn in my pressure cooker. 

Easy Veal Khorma

2 lbs boneless veal
canola oil
6 cardamom pods
1 1/2 cups yogurt
1/4 cup fried onion
1/4 cup ginger garlic paste
1 1/2 tsp red chilli flakes (or to taste)
1 tsp ground cumin
2 tsp ground coriander
1 tsp garam masala
salt to taste

 

Blend together yogurt, fried onion, ginger garlic paste, red chilli flakes, cumin, coriander, garam masala and salt.  I used my immersion blender to do this.

Heat a pan over medium high heat.  Coat bottom of pan with oil.  Add the cardamom and stir for 30 seconds.  Add the blended yogurt and mix continuously until it starts to bubble.  Stir occasionally until the mixture starts to change colour.

Add the veal and mix well.  Cover and simmer until veal is tender and the oil has separated, giving it a stir occasionally.

Note: I have tried making this in the pressure cooker, but I find dishes that have a large yogurt base tend to burn in the pressure cooker.  I recommend making it in a regular pan on the stovetop.
