Quick and Easy Bhindi (Okra)
3/4 - 1 lb of okra, trimmed and cut into 1/4 inch slices
2-3 tbsp oil
salt to taste
Heat a non-stick skillet over medium-high heat. Add the oil and once hot, add the okra and sprinkle with salt. Fry until the okra is tender and light brown. If you find the okra is sticking to the pan a lot, add a bit more oil. Serve hot!
