To start things off, I am sharing a recipe from Henna's blog. We all have those recipes that are our go-to recipes. The ones that are quick to whip up, use minimal ingredients and are satisfying. This is one of my go-to recipes. I've been making Henna's recipe for Chicken Kheema ever since she posted it. When I run out of adrak laysan (ginger garlic paste), it is a recipe I always think of. Sometimes I add potatoes because I am such a potato addict. Today I've left them out. We enjoy this kheema with roti and daal.
Chicken KheemaAdapted from My Ninja Naan
1 lb ground chicken
3 tbsp canola oil
1/2 onion, diced
1 tsp cumin seeds
1 green chilli, chopped (I only had a red chilli)
1 tomato, diced
1 tsp coriander powder
1/2 tsp red chilli powder
salt, to taste
handful coriander, chopped
In a pot, heat oil over medium-high heat. Add onions and fry until translucent.
Add chicken, cumin seeds and green chilli. Cook until chicken no longer looks pink.
Add tomato, coriander powder, red chilli powder and salt. Cook for a few minutes. Cover and reduce heat to medium-low. Cook until tomatoes have lost their shape and most of the liquid has evaporated. Remove lid and cook until all the water has evaporated. Remove from heat, sprinkle coriander and enjoy!
