Easy Overnight Oats with Banana

In the past, my go to breakfast has always been a bowl of cereal.  Mornings are rushed with getting the boys to two different schools on time.  Cereal for breakfast is fast to prepare and requires minimal work, but many cereals have a lot of sugar in them making them not the best choice for breakfast.  When I started the 6 Week Fitnest Challenge by Zehra Alibhai a couple of years ago, I changed some of my eating habits.  That's when I started eating these Easy Overnight Oats with Banana.  I have been trying different recipes and finally settled on one that I really like.  Preparing a few jars ahead of time, makes it easy to make a healthy choice for breakfast.  I still haven't gotten my boys onto the these Easy Overnight Oats yet.  Also, if my husband needs to grab a quick breakfast, there is something prepared for him to eat.  I originally didn't add the chia seeds and one day I thought to toss some in and see how it turned out.  I loved the result, the oats were thick a…

Garlic Rice Pilaf

This is a simple rice dish that is easy to make.  We love to have it with fish.  It's a great change up from just plain white rice.  It won't over power your main dish.  I usually use bottled lemon juice because I'm usually in a hurry but for best flavour use freshly squeezed.  Although it is easy to make it does bake for about 40 minutes.

Garlic Rice Pilaf
Adapted from Annie's Eats

2 tbsp olive oil
3 cloves garlic, minced or pressed
1 cup basmati rice, washed
2 cups vegetable broth, divided
1/2 tsp salt
1/2 tsp freshly ground black pepper
3 tsp lemon juice

Preheat oven to 350 F.

In a pan, heat the oil over medium-high heat.  Once hot add the garlic and rice.  Cook until golden, approximately 3-4 minutes.  Add 1 cup of broth, salt and pepper.  Stir and bring to a boil.  Once it comes to a boil transfer to a casserole dish and bake for 15 minutes.  Stir in remaining 1 cup of brother and cover.  Bake for an additional 10 minutes.  Add the lemon juice and bake for another 10 minutes or until rice is done and broth has dried up.  If you rice is not done and there is no moisture add a little bit more broth.

Note:  Annie says that this recipe can be doubled without increasing the baking time.  I have not tried this yet.

  2. Do you need to bake it? Can you just cook the rice on the stove as you do other rice dishes?

    1. I've never cooked it on the stove top. I'm sure you could...just like how you make Yakhni Pulao.
