Peri Peri Chicken {Eid Eats 2015}

We are almost at the end of Ramadan.  Just a couple more days till Eid!  May Allah accept all of our fasts and duas!

To celebrate Eid, Henna from My Ninja Naan, Sarah from Flour & Spice along with myself are hosting Eid Eats!  It’s a virtual potluck where we all share dishes we like to make for Eid.

Today I am sharing Peri Peri Chicken.  Peri Peri is always a favourite with us.  What I love about this dish, is that you can marinate the chicken the night before.  On Eid, all that’s left to do is skewer the chicken and grill.  Since this is made using boneless chicken breast, it takes very little time to grill meaning you can spend more time enjoying Eid with your family and less time in the kitchen!

Peri Peri Chicken
Adapted from Fauzia’s Kitchen Fun

2 boneless chicken breasts, cubed
1 red bell pepper
2-6 bird’s eye chillies (I used 2 small red chillies)
5 cloves garlic, coarsely chopped
juice of 1/2 a lemon
1/4 cup oil
4 tbsp white vinegar
1 1/2 tsp salt
1 tbsp oregano
1/4 tsp red chilli powder
1/2 tsp freshly ground black pepper

Blend all the ingredients, except the chicken, in a blender or food processor.  Transfer to a bowl.  Add the chicken and mix.  Marinate overnight.

When ready to grill the chicken, thread chicken cubes onto skewers making sure to remove any excess marinade.  Add the leftover marinade to a small pot with half cup of water. Simmer until sauce thickened and cooked.

Grill or barbecue chicken.  When you turn the chicken over, brush with the cooked marinade.  Before removing from the grill, brush once more with the marinade.  Serve with the cooked down marinade.
